Found this easy recipe
Re-fried Rice and Shrimp (or chicken)

My quick Lyme diet/ gluten free/ Weston Price adjustments:

4 cups of prepared rice (I soak the rice)
1/2 pound of Shrimp or Chicken (works really well with leftover chicken)
1 c peas and carrots frozen  (I’ve also used celery instead of peas.)
1 white onion, chopped
2 clove garlic, minced
2 eggs
3 Tbsp sesame oil
1/4 c soy sauce (I substitute this with Bragg’s seasoning)

Prepare rice  to yield 4 cups cooked rice.
Heat sesame oil in a large skillet on medium heat.
Add onion, garlic, peas, and carrots. Stir fry until tender.
Crack eggs into pan and scramble, mixing throughout vegetables.
Add rice, chicken or shrimp or both, and soy sauce to pan. Stir




Lyme and Other News

My youngest seems to have kicked Lyme into remission! Praise God! (Thank you for your prayers!)

My Lyme however is flaring up and due to other health issues I had to put BVT on hold.

On a brighter note a new FSSP Parish is opening up near us and we are becoming new parishioners!

Lyme BVT Update

Bee Venom Therapy is going well. I feel so much better this month. Maybe it’s the combination of bees and sunshine. My husband has noticed the improvement too.

 (My daughter is responding well to the antibiotics and seems to be her normal self. Aside from the bulls-eye rash she is not symptomatic, Praise God! I pray her healing continues.)


Please keep my sweet two year old daughter in your prayers. I found a terrible bulls-eye rash on her arm and she was diagnosed with Lyme disease today. The Dr. put her on antibiotics. (She is too young for Bee venom therapy).  Please pray for her healing.

6 Months of BVT!!! Recovering from Lyme


Today marks six months of bee venom therapy! The results are astounding. I will list my symptoms so those who suffer from Lyme can see that healing is possible. You can recover from Lyme!

Symptoms Before BVT and after months and antibiotics: severe migraines, dizziness, joint pain (all over), full body muscle aches, heart palpations, air hunger, sensitivity to light,  extreme fatigue,  hormonal imbalances, lyme rage- mood problems, severe insomnia,  weight loss, extreme muscle weakness (could not climb stairs without losing breath, could not put my hair up without extreme effort and loss of breath). many neuro symptoms including depersonalization, depression, severe brain fog,

Symptoms 6 months into BVT: Joint pain in knees, headaches, occasional fatigue/ fatigue easily, occasional full body muscle aches and hormonal imbalances.

All my Neuro symptoms are gone!

weight is now back to normal and  I am regaining muscle tone!

Symptoms still come back if for some reason I am unable to sting on a sting day. But I hope for a full recovery in a year and a half.

5 months of BVT!

I should  just start a Lyme Blog. But here it is, I’ve completed five months of bee venom therapy! I’ve stung myself roughly 600 times. The improvements are unbelievable.

Symptoms prior to BVT and after months of antibiotics: depression, intrusive thoughts, depersonalization, migraines, brain fog, eye twitches, full body muscle aches, chronic fatigue (lifting my arm left me breathless), dizziness (so bad I couldn’t walk some days), hormonal imbalances, terrible joint pain, heart palpations, air hunger, Lyme rage and extreme sensitivities to light.

Symptoms 5 months in: fatigue, muscle aches (in legs), joint pain (in knees), hormonal imbalances and headaches.

Of course, if I skip a sting day, many of my original symptoms come back. My back itself is pretty scarred up at this point. But well worth the pain and the scarring.

Marriage Prep and NFP

In one of his Lectures Fr. Ripperger, suggests that NFP talks, given in mixed company are inappropriate. This observation resonated with me. I found it incredibly awkward, as an engaged woman, striving to live a chaste life, to be thrown into a room (of mixed sexes!) and given an explicit “how-to-use- NFP” talk by a married couple. I was mortified. I cried afterwards. It left me demoralized.

The NFP talk given at out marriage prep was at best confusing, at worst heretical. It was presented as a catholic contraception. If you don’t want to have children, use this, not contraceptives! How sad. The focus should have been on the great blessing of children not NFP strengthens marriages and is as effective as contraceptives!

One older engaged couple, said they were not open to having any children because  the dangers of pregnancy, at their age, were too great. This seemed to be accepted as  reason enough, and  to enter marriage, with not intention of ever having any children, was not even blinked at. It was troubling to hear such stories.

I thought marriage was for children, I thought NFP was for grave reasons, I thought that if you weren’t ready for children, you shouldn’t be getting married! The push for NFP seemed completely contrary to all of this.

When it comes to marriage prep, the focus should be marriage is for childrennot how to avoid having children. Of course, the evils of contraception needs to be addressed! Couples should be properly catechized in these matters. But these NFP crash courses are not properly catechizing people! They are  at once biologically explicit and Dogmatically  vague.

I believe NFP courses should be available, Catholicism is not a type Gnosticism, NFP isn’t a secret knowledge. However, it is just a small piece in properly catechizing couples. Such public and mixed presentations are inappropriate. Such sexually explicit discussions are better done in men only or women only groups or privately between the instructor and a married couple or even a single woman who needs it for health reasons.

I am not against NFP in itself. In fact, we find ourselves in a grave situation now. Sadly, my treatment for Lyme Disease, is incompatible with pregnancy.   (I tried treatments that were compatible with pregnancy but they did not work.) Without this treatment (BVT), I was completely bed-bound some days! Without it, my symptoms were numerous and far-reaching: from severe depression, intrusive thoughts to constant heart palpations. I was unable to fulfill my basic duties as a wife and mother.

With treatment, the disease is manageable. the protocol lasts two years. Our circumstances are not ideal.  Although we find practicing NFP necessary at this time, it grieves us. And it should, it’s not normal.
